Necessary Ingredients for Tuna Fish Noodle Salad

• Flakes canned tuna, 1 (5 oz. drained)

• 2 cups macaroni (the noodles not prepared)

• 1 cup cherry tomatoes, halved

• 1/2 cucumber, thinly sliced

• 1/4 red onion, thinly sliced

• 1/4 cup black olives, sliced

• Feta cheese, crumbled (1/4 cup; optional)

• Favorite fresh basil leaves, torn (to serve)

For the Dressing:

• Three tablespoons olive oil

• 2 tbsp lemon juice

• One teaspoon of Dijon mustard

• One garlic clove, minced

• Salt and pepper to taste

Prepared Method

  • Meanwhile, bring a pot of salted water to a boil and cook your pasta in it according to the package instructions until al dente. Drain and set aside to cool.
  • Quarter the cherry tomatoes; cut the cucumber and red onion into thin rounds. If not using feta crumble or part of it as helpers in another meal prep, slice up the remaining olives. Set aside.
  • Whisk the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper in a small bowl. Adjust seasoning to taste.
  • Add the cooked and cooled noodles, flaked tuna, cherry tomatoes, cucumber slices (I use a vegetable peeler), and red onion, thinly sliced if using, to a large bowl, along with black olives & feta cheese if you like. Top with dressing for the salad ingredients. Lightly toss the salad until everything is evenly mixed in the dressing.
  • Portion the salad onto plates or a serving platter. I added basil leaves for a bit of freshness and color. Et voila: A delectable Tuna Fish Noodle Salad ready to be eaten and savored in no time!
